Impossible to eat? Twaddle.

My favourite is pancakes sprinkled with fresh lemon juice and unrefined Demerara sugar. That was de rigueur for Pancake Day when I was a lad.

Yummy!

And they certainly ain't evil.
I have NO BELIEF in the existence of a God or gods. I do not have to offer evidence nor do I have to determine absence of evidence because I do not ASSERT that a God does or does not or gods do or do not exist.

Raw undiluted lemon juice may be too sweet to drink on its own but on pancakes it is no problem at all

Well, yes. Like many food items that have to be mixed with other food items to make them palatable.

My wife eats raw lemons every day and finds them sweet. Ripe lemons are not bitter. No worse than some oranges.

Bartoshuk’s studies have shown that a substance called miraculin can allow lime and for some people, lemon, to taste sweet. Miraculin is a natural sugar substitute, a glycoprotein extracted from the fruit of Synsepalum dulcificum. Miraculin itself is not sweet. However, after the taste buds are exposed to miraculin, which binds to sweet receptors on the tongue, acidic foods which are ordinarily sour, such as citrus fruits are perceived as sweet. This effect lasts up to an hour. This effect does not work for everyone tasting very strongly sour foods, such as lemon, because some people, described by Bartoshuk as super tasters, taste things very intensely, so a lemon will taste so sour that miraculin has little impact.

There are a number of different lemon varieties. The Meyer variety is definitely sweet. The Lisbon or Eureka varieties definitely lean on the acidic, sour side.

I would be nice to know the varieties. We buy organic lemons but they come from different countries but no mention of varieties. :(

Very interesting. Of course, the issue as to how citrus fruit, like lemons, evolved is a big evolutionary mystery.

Citrus trees are sluts, they'll cross pollinate at the drop of a hat. I've got Clementine oranges, Persian limes, and Makrut limes in the back yard, and they all pollinate each other willy nilly. I get limes the size of small grapefruit that are sweet, small sour oranges, any combination you can think of. The same tree will produce several different kinds of fruit.

That article describes when citrus fruits appeared, not how they evolved by natural selection? What good is 1% of a lemon?

The same way literally everything else alive on Earth evolved by natural selection. Maybe you should read up on natural selection, then you'll know how it works and you won't be so confused all the time...
