its actually the lateral line and is a sense organ. it varies amongst species and can be very specialized for various tasks

as far as I'm aware, in the elephant noses they have Ampullae of Lorenzini in it, which allow them to detect electrical fields around themselves (warning of predators), whilst others have modifications to the structure that enable them to identify prey (ripples for killifish, inverts in sand for Aulonocara (Malawi peacock cichlids )) and its also used in the shoaling behavior (lets the fish know what the dish around it are doing.

not really thought about it before, but as I was typing it I thought about the way the inner ear works, and wiki likewise suggests that they might share a common origin.
