You can have any footage/still photos the physician takes during the operation. It's part of YOUR medical information, the doc may not give them to you, but you can get copies from the hospital later by filling out a form and getting copies.
The gallstones are part of you body and the Doc can't keep them from you after pathology is done with them. Ask the hospital for it's policy on getting body parts back after a procedure, they must have one. Ask the Doc again the morning of surgery for copies of the still photos. I don't know how it works in Erin, but in the USA that's how it works.
I participated in an amputation once and had to take the guys mummified toes and hand them to him in a bag because he demanded them. He told me he was going to make a necklace.
