If angels are real, what would they be made out of? Would they have mass? Would they emit radiation? and how would they 'work' (What would they have in place of brains, and other biological processes) ?

Excellent observation! It seems reasonable that they'd enjoy doing what they're good at. So, one might infer they playing hide and seek is a favorite pastime. Kids play hide and seek all the time. The OP's questions about properties of angels could equally be applied to ghosties, currently being discussed in this thread.

I always wondered how, being wispy things, they could walk through walls, but not sink through the floor due to gravity. And if they weren't subject to gravity, why don't they just float off.

Mormons believe that angels are resurrected humans who had previously lived on earth as mortals. Apparently, they have tangible bodies of flesh and bone, but they have super powers. For example, they can hover in mid air, pass through walls, teleport, and that kind of thing. They also glow so brightly that they light up rooms.
