Yeah, the launch site was in Florida (as all of our manned spaceflights have been) in the Eastern time zone - but Mission Control was in Houston Texas.
Because LBJ's support was needed to get NASA going in the early days, and he loved nothing more than some pork barrel spending for Texas. So the flights were controlled from the Cape until the spacecraft cleared the tower, then control was shifted to Houston.
Stupid arrangement.
