I live in a Muslim country and everything doesn't stop at prayer time, nor is our work schedule...erm...scheduled around prayer times, so I assume that either most people don't actually adhere, or that they are allowed a certain amount of flexibility when they do it. I've taught plenty of lessons when the call to prayer was happening and not once has a student asked to be excused.
