Scott, an interesting question merits an interesting answer. Unfortunately all I can provide is the pulpit explanation, which is not very interesting...

Noah's sons were not committing incest; they were in fact married to women outside Noah's family. Of course, this sounds inconsistent with the story, since only Noah's immediate family was thought to fall under the protection of God due to Noah's personal righteousness, being "perfect in his generation", etc. However, the accepted doctrine here is simply that sin is not imputed to the next generation through women, but through men only, so that the grandchildren of Noah were safe.

This doctrine is assumed to hold throughout time, since Mary the mother of Jesus was able to endow her child with Humanity, with no danger of cursing him with The Sin Nature.

Yep. Boring.
