Because it is, in large part, being organised by the Atheist Foundation of Australia, and being held in Australia.
I'm sure if you wanted to donate your time and resources to, for example, designing a more catholic logo, they'd be more than happy to take you up on the offer. As I understand it, this sort of shit takes a lot of time and effort to get across all the details, and those who've stepped up make a fairly smallish team.
Last GAC, I'm reliably informed, cost one particular organiser a good 6 months of time and effort that could otherwise have been spent profitably pursuing, well, profit.
In other words: Do you want to do this? You're welcome to it.
