Oh, far too many to choose. Like you, I'd say anything by Nobuo Uematsu. Revamped versions of Zelda and Metroid theme music are cool too.

I was interested to find that it's actually based upon an arrangement of Johann Sebastian Bach's French Suite No. 3 In B Minor. I can't hear much of a connection myself
