Only a tiny sliver of a minority. Even a strict Biblical literalist has a much simpler interpretation available: Adam's number of ribs post-surgery was not inherited, just like any other surgical or accidental amputation is not inherited.

A Biblical literalist would have various possible simple explanations, once they were aware of the real situation.
In addition to the one you present, they could, for example, claim that the rib could have grown back either naturally or with divine assistance, or that the post-surgery Adam was the model both for Eve and for subsequent humans.
