I've always been keen on Melibe, a rather bizarre genus of nudibranch. Also known as the lions mane sea slugs. Sadly I have never seen a living one.
I somewhat fancy Melibe as a reasonable example of an early stage in the evolutionary development of jaws, perhaps that is a bit romantic of me but I still like them.

Actually, one group of dinoflagellates, the Warnowiids, have light sensing organs that are comparable in structure and complexity to vertebrate eyes. Yet, they don't have a brain or a nervous system. Yes, that's right, they're plants with eyes. More on these and other dinoflagellates (which in themselves boast a range of weird and wonderful features even if you ignore the Warnowiids) can be found here.
