Townes Van Zandt penned a lot of great songs which have been duly covered, but his cover of the Stones' "Dead Flowers" (brought to a wider audience in The Big Lebowski) is a fine cover in itself:

The entire album is a really good tribute to Dio. It's a shame he died without being able to hear it.
